Cherry Blondies





So iv seen allot of versions of these blondies floating around on the vegan blogs, I figured if everyone's making them they must be good. I hadn't seen them made with cherries yet so I decided to use those as a topping. They took longer then I thought they would to cook but that's ok. I couldn't get any good shots of the inside which looks like swirls of black and white. They were really rich almost like a soft chocolate chip cookie x756999 hahaha. I substituted a couple things so ill post the recipe I used. God im soo full right now from leftover pizza which btw is even yummier the day after and from these blondies I think im about to explode!


Cherry Blondies ( adapted recipe from theppk.com original version )

Ingredients

6 oz container vanilla soy yogurt
1/4 cup + 2 Tablespoons canola oil
1 cup 2 Tablespoons sugar
1 Tablespoon vanilla
3 Tablespoons maple syrup
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup choc chips
12 cherries pitted

Directions

Preheat oven to 350 and line an 8x9 brownie pan with parchment paper and set aside (if no parchment is handy, spray w/ non stick cooking spray or brush lightly with margarine or canola oil)

In a medium bowl, sift together flour, baking soda and salt.

In a large bowl combine yogurt, oil, vanilla and maple syrup. Mix with a wire wisk. Add the sugar and wisk until well combined (about 30 seconds).

In batches, fold the dry ingredients into the wet, slowly, wisking as you go along. Fold in chocolate chips.

Pour batter into the brownie pan, spread with a spoon or spatula. Top with cherries. Bake for 30-35 minutes until top is firm and brown.

Let cool completely before serving.

Dont worry about it!
Ive never made blondies before this either and when I told people what they were most had never heard of it either... I think its some sort of 60's food hahaha

Either way though everyone loved them... but the little slice that I had made me terribly full im still recovering lol
