Dutch Apple Pancake






Ahhh jeeze this is good, and really simple! Its not actually supposta be pink but since I only had strawberry apple sauce in my fridge it came out pink hahah.

I added less butter then the recipe called for and used puree'd tofu as an egg replacer this is a breakfast recipe but it can double as a dessert.

Cherry Blondies





So iv seen allot of versions of these blondies floating around on the vegan blogs, I figured if everyone's making them they must be good. I hadn't seen them made with cherries yet so I decided to use those as a topping. They took longer then I thought they would to cook but that's ok. I couldn't get any good shots of the inside which looks like swirls of black and white. They were really rich almost like a soft chocolate chip cookie x756999 hahaha. I substituted a couple things so ill post the recipe I used. God im soo full right now from leftover pizza which btw is even yummier the day after and from these blondies I think im about to explode!


Cherry Blondies ( adapted recipe from theppk.com original version )

Ingredients

6 oz container vanilla soy yogurt
1/4 cup + 2 Tablespoons canola oil
1 cup 2 Tablespoons sugar
1 Tablespoon vanilla
3 Tablespoons maple syrup
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup choc chips
12 cherries pitted

Directions

Preheat oven to 350 and line an 8x9 brownie pan with parchment paper and set aside (if no parchment is handy, spray w/ non stick cooking spray or brush lightly with margarine or canola oil)

In a medium bowl, sift together flour, baking soda and salt.

In a large bowl combine yogurt, oil, vanilla and maple syrup. Mix with a wire wisk. Add the sugar and wisk until well combined (about 30 seconds).

In batches, fold the dry ingredients into the wet, slowly, wisking as you go along. Fold in chocolate chips.

Pour batter into the brownie pan, spread with a spoon or spatula. Top with cherries. Bake for 30-35 minutes until top is firm and brown.

Let cool completely before serving.

Mocha Chip Muffins





These are really good! I wanted to make these in my mini muffin pan that I just got from the store but me being the genius I am forgot to get the mini cupcake papers and I was afraid that they would get stuck in the pan if I didn't use them so I had to make boring old big muffins haha but I mixed it up a bit with the CareBear wrappers. lol

I fed these to a bunch of carnivores and they all said "wow these are vegan!??!" cause you know all vegan food must taste like lettuce and whole grain bread haha. These are probably the best muffins/cupcakes iv made so far the flavor is just right and its not dry or to moist. Im probably going to make these again very soon!

Pizza!

Wow this pizza even surpassed my expectations it was so good. I topped off the pizza with basil, tofu ricotta cheese (recipe below), black olives, artichoke hearts,and marinated tomatoes.











TOFU RICOTTA (original recipe found on theppk.com)

Ingredients
1 pd firm tofu (pressed)
2 tsp lemon juice
2 tsp olive oil
2 cloves garlic minced
1/4 tbsp salt
1/8 cup nutritional yeast flakes ( you can double if you want a stronger nutty flavor )
handfull of basil leaves chopped fine (ten leaves or so)
dash of black pepper

Directions

In a large bowl, mush the tofu up with your hands, till it's crumbly.

Add lemon juice, garlic, salt, pepper and basil. Mush with hands again, this time you want it to get very mushy so squeeze through your fingers and mush until it reaches the consistency of ricotta cheese. May take 2-5 minutes.

Add olive oil, stir with fork. Add nutritional yeast and combine all ingredients well. Use a fork now, because the oil will make it sticky. Cover and refigerate until ready to use.

Vegan Cuppiecakes

Sorry guys but this post is mainly pictures because I'm lame and can't find the recipe I used to make these and I'm crazy busy at the moment.
I spent most of today running around town like a madwoman to find the ingredients and vegan Vanilla frosting and sprinkles, both were a sucess but I couldn't find vegan Chocolate frosting for my little brother who loves chocolate but he didn't mind. I'll edit this later when I have time and fill you in on what I used.
Oh P.S. I'm in love with Tofu.

P.S.S. Briggie makes me look lazy with her constant updating and cooking but I love her anyways.

Apple Spring Rolls









So I made some apple filled spring rolls today topped with cinnamon sugar they were really yummy and most importantly really simple to make. All you need is some spring roll wrappers (make sure their vegan) and apple pie filling you can get the canned kind or make your own. Mash up the apple so its in little pieces not apple sauce but chunky then roll into little spring rolls and fry in a small amount of oil and top with cinnamon sugar... I ate them with some Temptation Coffee vegan ice cream mmmmmm!

No more cooking this weekend, I have way to many containers full of leftovers in my fridge, im just going to make things out of the leftovers or else their going to be in there forever! ahhhhh [Que. the scary music]

Vegan walnut brownies

Right now I'm waiting for my brownies to finish baking. I was sooo excited to get started. Making vegan brownies isn't hard at all it was about the same as regular brownies. The tofu part was kinda tricky getting it to be smooth but it wasn't bad. I was kinda stupid though and added the walnuts before I made sure the batter was completely blended so i had to stir forever to be sure there wasn't any chunks of flour or cocoa. I'll post pictures as soon as the brownies are out of the oven before my little brother and cousins dig in. I don't plan on telling them their eating vegan brownies until they finish and are raving about how good they are....hopefully.

Oriental Onion Waffle I thought these would have egg in them but they didn't i'll probably make some soup and eat a couple "pancakes" in conjunction with it man this is making me hungry! haha

Mock Ham Chicken? Well iv never heard of a Ham Chicken before but id figure id try it.

Best Potatoes Ever!





These Potatoes taste amazingly tender and buttery even though theirs no butter or margarine in the entire recipe. It was a huge hit with everybody and they were all amazed they I didn't add any butter subs to it. So lets get past all the chit chat here's the recipe try it... or don't im not the one missing out on all the potatoie goodness. haha


Best Potatoes Ever!

3 Tablespoons minced garlic ( or to taste i like alot)
1 1/2 tbsp extra virgin olive oil
4 large potatoes
Sea salt and freshly ground black pepper to taste
1 bunch of fresh dill

Preheat your oven to 450 F. Chop potatoes into bite size cubes put into casserole dish that has a top. Chop fresh dill. Add all ingredients into the casserole dish and toss around with potatoes. Put into oven with top on for around 30 min. check potatoes with a fork to make sure they are tender.

Serves 4

Edible Flower Cupcakes









So I was at the Flower Market yesterday and came upon edible flowers! Of course I had to buy some to put on my Easter Cupcakes because how perfect is that? The cupcakes are chocolate cinnamon with "cream cheese" frosting. The only problem is nobody wants to eat them because their so pretty!

Vegan Snicker Doodles



These are so yummy iv personally never made snicker doodles before this, and very rarely ate them but this recipe looked so easy that I just had to try and it was even easier then it looked. Its basically a recipe for sugar cookies or atleast that's how they taste to me but that's not a bad thing next time i think i might try putting chocolate chips on them instead of the cinnamon sugar just to see how it comes out. Follow what the recipe says because even though the cookies will look like their not done at all they are, and this really does make around 30 decent size cookies I was searching all over the place for baking sheets to put them on so you might want to cut the portions in half but either way they'll probably be gone in a few days!

Perfect Vegan Snickerdoodles

1 cup margarine
1 1/2 cups granulated white sugar
1 tsp vanilla
4 tbsp soy milk whipped with 2 tbsp cornstarch
3 cups unbleached white flour
1/2 tsp salt
1 tsp baking powder
1 tsp cornstarch

2 tbsp cinnamon
4 tbsp granulated white sugar


Preheat your oven to 300 F.

In a large bowl, cream the margarine and sugar together until smooth. Add the vanilla, and the cornstarch/soymilk mixture, and beat until well-mixed.

In a smaller bowl combine the flour, baking powder, salt, and tapioca/corn starch. Stir this into the wet ingredients and combine well.

In a very small bowl stir together the granulated sugar, cinnamon and cocoa powder (if desired).

Begin rolling the cookie dough into balls of about 3 tbsp each. Roll each ball in the cinnamon/sugar/cocoa powder mixture until completely coated and place on an ungreased baking sheet. Continue until all the dough is used up. Using the bottom of a glass, press down on each ball. Bake for 12 - 14 minutes, and no more. The cookies should still seem very soft when you remove them from the oven. Let cool on the pans for about 10 minutes, and then transfer to a wire baking rack and let cool completely.

Egg-less Egg Rolls

So I love egg rolls but its hard to find good vegan ones. So iv started making them myself their not nearly as hard as I thought they would be to make infact their pretty damn easy. I also like the versatility of egg rolls you pretty much can put whatever you want in them the only part I don't like is frying them which for some reason annoys me when it comes to anything I just hate frying things even if its only in a dab of oil it makes me feel weird. I have a feeling this is deep rooted in my childhood since pretty much everyone I grew up with was involved in some sort of profession which involved physical health I was always taught to "never fry anything always bake" hahaha.



Tofu Cupcakes could there be anything better?

Ok so after a long while of stalking peoples vegan food blogs and wishing i had my own vegan cooking show i figured id do the next best thing and make a blog about what else but vegan food most importantly EASY vegan food.


I made these chocolate cupcakes with cream cheese icing and oh my god where they yummy and o so moist. I like to use tofu "paste" in the place of eggs its really simple just 1/4 cup of tofu for every egg called for in the normal recipe. Put the tofu into a bowl and use an Emerson blender aka stick blender to blend the the tofu until it turns into a smooth paste.
